Triacetin (glyceryl triacetate) is an ester of glycerol and acetic acid used mainly as a solvent and carrier for flavorings and fragrances, and as a plasticizer in some coatings. In food, it appears in small amounts as a flavor carrier rather than a primary ingredient.
