What is E312?
Dodecyl gallate (also called lauryl gallate) is a synthetic antioxidant derived from gallic acid, used at low levels to prevent oxidation of fats and oils in food and cosmetics. It is used less commonly than propyl or octyl gallate but works similarly. Regulatory agencies have set a group acceptable daily intake covering all three gallate esters, and normal food use stays within this limit.
